The on-site 0-220 degree F round metal stem probe thermometer validates accurate at 32 degrees F when tested in an ice water bath. A thermocouple thermometer though is highly recommended for this operation for better accuracy and efficiency. The mechanical dishwasher is operating at the proper temperature, and has a proper concentration of sanitizer testing at 100ppm with the inspector's chlorine chemical test paper. Per operator, Ed Bartos had previously agreed to allow that the rest room doors could go without completely self closing because of their location in a back hall.
