Comments: Education given on all deficiencies. All violations must be corrected and may result in enforcement. Active sanitization at time of inspection. test strips provided and will be used to maintain proper sanitization levels. Milk cooler temperatures adequate. Walk-in cooler temperatures adequate except as noted below. Hot holding temperatures on the service line adequate with pasta at 172 degrees, vegetable soup at 184 degrees, cooked broccoli at 180 degrees and twice-baked potatoes at 183 degrees. Approximately 2 pounds each sliced turkey and sliced ham found to be in walk in cooler at 54 and 56 degrees respectively. Both meats had just been out for active sandwich prep. Meats said to have been used for sandwich prep and then put back into cooler approximately 1 hour prior to temperature measurements. Because the meats were in 2 separate packages and were very dense and had a large depth, sandwich meats were spread into a thin layer onto metal pans and put into the freezer to rapidly cool to 45 degrees. Proper temperature of 43 to 45 degrees was achieved within 10 minutes. Re-tempted by inspector, meats were found to be at 43 to 45 degrees. Meats were repackaged and returned to cooler. Discussion about slicing meats and techniques to maintain proper cold holding temperatures and to achieve rapid, adequate cooling. Meats will be sliced and temperatures taken to assure safe food handling. Hot hold unit used to hold food prior to family-style service temperatures adequate with pasta at 158 degrees and meat sauce at 186 degrees. I am unable to ascertain, at time of inspection, if the clear, plastic bags used in hot holding units and to hold various food products such as sliced meats, are approved, food grade material. Please provide this office with proof that plastic bags used for hot holding units and for food storage such as deli meats are certified as NSF-approved/made of certified, food-grade mater

Both things may impede access in the event of an emergency where the eyewash station is needed. Walk-in temps adequate. Indirect drains in place. Milk in cooling units at 37 and 38 degrees.

The following temperatures were measured (degrees F): Steam Table on Serving Line - Chili - 147.7; Walk-In Cooler - Sliced American Cheese - 44.4; Air Temperature - Milk Coolers - 38 to 40; Reach-In Cooler - 29; Walk-In Cooler - 38. The Final Rinse Temperature on the Mechanical Dish Washer was 183 to 184 degrees F. Resubmitted this report because the previous copy had the High School Cafeteria as the facility inspected instead of the Elementary School Cafeteria. The Elementary School Cafeteria is the correct facility that was inspected for this report. Report e-mailed.
