Comments: Kitchen is not yet complete. Operator has installed a seven foot commercial exhaust hood which was charged in July of 2016. There is a 6 burner gas southbend stove and two pitco fryers. Note and 18 steel table is planed to go between the fryer and the stove. Barrier of 18 in height or 18 inches away must be maintained between the fryer and the open flame on the stove. Three bay sink with coved corners and air gap drains has been installed. Note the operator states they will be getting a different 3 bay with drainboard area. The air gap drains must be maintained in new installation and sink must have smooth coved corners. A separate hand wash sink will be installed near the entry to the kitchen. Remaining wall will have work table and metal shelving to be mounted on the wall. Other equipment outside the kitchen includes a norlake prep cooler that is currently outside the kitchen area and will be installed in kitchen beside the fryers. A flattop grill is also available for use outside on the deck under the porch. Operator will not be installing a dishwasher at this time they plan to use disposable plates and utensils. There are two small closets on either side of the entry to the dining area which will be used for dry or food storage. The carpet in these closets is to be replaced with washable flooring and shelving must also be easily cleanable. Current seating is 27 inside including the bar and 20 outside on deck for a total of 47 which is well under the current permit restriction of 95 seats. Food service is intended for golf course only no events at this time. Operator must submit Certificate of Compliance from local code officer inspection. |
