Culinary cold hold at salad service line: tomatoes 42 degrees. Hard-boiled eggs 44 degrees. Culinary hot hold temperatures except for noted Brussels sprouts adequate: Cream of broccoli soup at 160 degrees average temperature, Chicken at 156 degrees. School cold hold at salad service line: Lettuce salad 45 degrees. Tomatoes 43 degrees. School hot hold service line area: Pepperoni pizza 158 degrees. Discussion with both operators about protecting open containers of food per Sanitary Code 14-1.42 Storage of food removed from original containers or packages. Ansul system service date School side of kitchen August 2018. Hand wash sinks being maintained properly. Putman Pest Control said to check facility monthly. Chlorine residual at 0.4. Rick Vogel on site and presented inspector with the current Operation Report.
