Comments: Per operator, kitchen is seldom used, and that it is mostly used for frying french fries and occasionally used for cooking hamburgers (on a hot plate cooking device) Discussed requirement for food product thermometer to measure greater than 140F (as minimum cooking temperature for ground beef is 158F). // Reach-in cooler unit thermometer reads 39F. // Sanitizing tablets used for sanitizing glassware in bar area. Discussed that wash cloths are stored in properly prepared sanitizing solution between uses. Sanitizing test paper is available for use (although case for test paper appears to be outdated and label is faded). Facility not open and operating at time of visit (operator happened to be on-site today to meet with a vendor, and is usually only open on Friday and Saturday nights).

Comments: ATOI = at time of inspection. Per operator, Juan, kitchen closed at time of inspection due to ceiling repairs (roof was leaking and was replaced this week). Exposed Sheetrock (in section of ceiling that was damaged due to roof leak) is scheduled to be repaired this week. This section of the kitchen is closed off from lower kitchen area by aluminum covered foam panels (fairly tight seal). Observed UV system - ok. Observed Juan using sponge to wipe surfaces - discussed using wiping cloths instead and keeping them stored in sanitizing solution between uses. Discussed cooking procedures and use of stem-type thermometer, particularly for hamburgers, which Juan explained that he cooks on his electric griddle next to the three basin sink (in the lower section of the kitchen). Did not observe any foods under preparation atoi; however, the importance of using the thermometer when cooking foods was stressed to operator. Other than hamburgers, menu includes frozen foods that are cooked in deep fryer (french fries, mozzarella sticks, chicken tenders, etc.).
