Quat sanitizer and high temp dish machine were tested to be satisfactory. Hand wash facilities and gloves provided. Probe thermometers and equipment therms appear to be accurate. Discussed TPHC and gave forms to complete. Foods offered with 4 hour hold time and will submit station specific TPHC forms with general description of foods. Discard times will be recorded. Upon review todays hot line had final reheat temp for all foods but was lacking discard time for some items. 10-2 hold to discard time was documented for 2 items but other 8 items had not been recorded by 11 am. Discussion and immediate correction observed. All items on this buffet had internal temp >140 f. HACCP will be conducted at Sullivan Pk re-inspection. |
