Comments: all buffet temps satisfactory - all refrigeration temps checked and are satisfactory facility has made huge improvement to dry storage area with new walls, ceiling, lighting etc... overall facility cleanliness much improved as well Note regarding cooling violation - recommend discussing with the staff that close the buffet soup line that products should not be covered until it is verified they’re below 45 degrees - suggest once product is in cooler and during cooling process the product is routinely stirred and temps are taken of product before they are covered to ensure they get to below 45 degrees within 4 hours.

An exception has been the rear dry storage pantry area. Per operator, recent approval has been acquired for renovations to be made to this room. Ceiling tiling, lighting replacement and additional cleaning are planned with commencement anticipated the first week of May. General light cleaning observed, but wall cleaning to be addressed with renovations. Usage of ice wands for cooling is observed. Suggested rearrangement options for walk-in cooler to facilitate safe handling of temperatures and monitoring due to limited cooler space. More attention to be placed on chilling prior to placement into walk-in cooler. Dishwasher sanitizer 200 ppm.
