Comments: All corrections must be addressed within two weeks of this inspection. Contact 518-793-3893 or email your assigned sanitarian. Education provided during inspection to staff during the reheat cooking process of fried chicken. Chicken is precooked and cooled therefore must be reheated to above 165 degrees F. and be sure to check temp before serving to insure proper reheat. Education provided on the flip top cooler in that the top portion of the unit is not an adequate cold holding unit for foods that are stacked above the lid line of the container inserts. At time of the inspection the top portion of foods borderline in temperature. Also keep unit covered during times when not in use. Cold comes up from bottom. Issued educational packet of information for staff. Facility shows much improvement from previous inspection. Hot held temperatures excellent. Discussed cooling with staff in that ice bath is used with cover off for cooling. Dishes are Washed, Rinsed and sanitized in dishwasher sink, then air dried. Bleach -1 tbs per gal equals 50 ppm for dishes, and double for swabbing or 100ppm. Spoke with operator Sue on telephone during inspection and discussed report.
