Comments: Chowder Fest, indoor service. Tuscan chowder temped at between 136 degrees F & 156 degrees F with a metal stem thermocouple thermometer. Ok, but stirred the 136 degree batch so that the minimum 140 degree F hot hold temperature could be achieved. It is highly recommended that metal stem thermocouple thermometers such as a Thermapen be obtained for this size and volume operation.
