Comments: 1) Aluminum foil is being used to line shelf above stove, griddle ( when off) and sides of fryers in effort to facilitate easier cleaning. Foil observed at time of inspection was newly placed. Inspector discussed with staff the need to remove and replace whenever it becomes soiled or damaged and no less often than daily. 2) Pan of mashed potatoes and container of gravy both with dates of 2/17/16 were observed in the Pepsi refrigerator. Staff stated they would not be using due to how long they had been there. Products were voluntarily discarded. Storage of cooked foods was discussed with staff. Inspector also reviewed with staff their cooling and thawing procedures - procedures appear to have improved since their last inspection.
