Logs indicated temperature of this cooler was within allowable limits early in the day before lunch, but rose to above 50F in the afternoon, later falling back to allowable limits. Staff also discussed where food was being probed for temperature and the probe was being inserted near the bottom of the pan (coolest) area rather than near the top where the reading would be more indicative of the cooler's performance. Inspector demonstrated the anticipated temperature gradient probing various areas of food to show staff best practices. |
