Comments: Nothing cooking on the stove at time of inspection, no dinner orders yet. Took temperatures of flip top preparation counter near stove, items all below 40 degrees, in fact some were at 33 and 34 degrees. Very nice.

Comments: This is inspection two of two for 2018. Item corrected from previous inspection where the floor was damaged exposing the subfloor: the entire kitchen floor covering has been replaced. Item corrected from previous inspection , dumpster cover is closed. Item corrected from previous inspection cardboard under utensils in center preparation table is gone. Item corrected from previous inspection no use of used cans to store grill utensils, the utensils are in a washable smooth decorative glass holder. mechanical dishwasher was at 177 degrees the minimum is 170. Wall covering at dishwasher area was replaced and is now smooth pvc, very nice. Discussed the chicken wing cooking and reminded staff to cook adequately and verify by taking temperature of the wings to make sure they are at least 165 degrees. The raw wings are deep fried first and removed to baking sheets that have parchment paper to absorb oil and fat. They remain on the bakng sheets for approximately one half hour and are covered in celophane and placed in the walk in freezer to freeze. Once frozen staff put the wings in clear celophane bags in portions of 12. The wings remain frozen until they are placed in the deep fryer upon order. The fourth quarter bacteria sample is due to be collected. all other water samples and reports have been received, the October 2018 water system operation report is due now.

Comments: This is inspection number 2 of 2 due in 2017 required for this establishment. see above for explanations of items. temperatures in walk in cooler items ranged from 40 to 42 degrees. Maximum is 45 unless cooling. temperatures of salad preparation table items were 41 to 42. Application for 2018 delivered at the time of the inspection since the 2017 application was late. Application and associated documentation are due by December 11, 2017 for regular fee (21 days prior to next operating period). If received December 12, 2017 or later will be $275.

Comments: This is inspection number 2 of 2 routine for 2016. Received an anonymous complaint about a dog in the kitchen and at the bar August 26, 2016, it looked like a copy of a rating from a website but is only speculation. Incident allegedly occurred around July 14, 2016, but lacked details. In a previous inspection a small dog was in the establishment. The animal needs to be kept out of the food service establishment and only in the residential space. Wastewater absorption field observed and appears dry on the top indiicating that there is no above ground discharge of inadequately treated wastewater on the ground surface (a public health hazard). The plastic caps noted in the basement have been removed and the basement cleaned, this was corrected from a previous deficiency noted the first inspection in 2016. Note that if another routine total coliform bacteria sample is missed until september 30, 2017, the establishment will have to begin monthly bacteria sampling since the Revised Total Coliform Bacteria Rule became effective April 1, 2016 where if there are two monitoring violations (if two or more quarter samples are missed) in a 12 month period monthly monitoring is required. Walkin cooler is properly arranged. All raw foods are properly stored in a separate section from the raw meats. The raw meats are stored on the bottom shelf away from other food items so there is no potential for the raw meat dripping on any other foods including ready to eat foods. Cardiopulmonary resucitation kit in NYS compliant and is located near the rest rooms. CPR Location sign given to be posted as required. Fresh grilled steak medium rare as per customer order was 134 degrees, and satisfactory. Steamed pork ribs at 194 degrees minimum is 150 and is satisfactory.

Comments: This is inspection number 1 of 2 for 2016 Food temperature in degrees Fahrenheit salad sandwich pep table with dip portions storage at 40 below and 44 marinara cooking inside is 141 outside 167 remember to stir occasionally during the cooking process Discussed sanitizing the work surfaces after preparation of raw meats like chicken, steak, rib eye Preparation of chicken wings was discussed as they are a popular item al year: they are taken out of the package and placed in the deep fryer, temperature taken by staff, remember the wings need to reach 165 degrees. Then they are taken out of the fryer and placed upon a baking sheet for a short amoint of time so the plastic wrap will not melt , they are covered in the plastic wrap and refrozen. Remember the recommended final cook temperature of the second cooking for a single order is at least 140 for a single portion. For a large order, 165 because of the mass, longer consumption time and greater potential for left overs for the consumer and temperature abuse. Discussed hand washing and no bare hand contact with staff.
