Comments: This is inspection number two of two for school calendar year 218 to 2019 and inspection number one of two for calendar year 2019. Milk in service line milk cooler was 38 degrees. Tuna salad rare item on menu but there was a can in the dry goods storage. Discussed that when mixed, it must be pre-chilled to between 32 degrees and 45 degrees prior to mixing ingredients like tuna mayonaise, pasta for cold salads. service line temperatures, cooked corn 175; chicken taco mix at 157; beef taco mix at 164. chicken comes diced and pre cooked so initial cooking temperature is 140 degrees. beef comes frozen or raw, so minimum cooking temperature of this item is 158 degrees. These temperatures were met. So if there leftovers, if cooked in mass they must be reheated to 165 minimum.

Comments: This is inspectoon number two of two for calendar year 2018 and inspection one of two for school calendar year 2018 to 2019 required by State Education Department. Mechanical dishwasher temperatures meet manufacturer's specifications for wash and rinse, no changes at this time. Hot water sanitizer, detergent and rinse aid used. popcorn chicken is the entree today and is oven cooked in convection oven at 350 degrees ans timed. with about one minute left the te mperature of the chicken was 191 degrees. mashed potatoes at 160degrees at service line. Note the dry goods storage room was remodeled, floor wall, ceiling, all refurbished. Very nice.

In this case it was bowls of bananas under the glass.

Comments: Pizza cooked and staff measured and recorded tempaerature as 180 degrees Fahrenheit (F). Was peperoni so minimum would be 140 F because peperoni is a ready to eat food. Only cheese and peperoni pizza served. Seal on milk cooler door was replaced in September 2015 was not noted in previous inspections but was noticed by staff as a deficiency while cleaning because it was in poor condition Penetrations in dry good storage ceiling corrected from previous inspection. Floor of walk in cooler repaired from previous inspection. Debris cleared from edge if walin cooler from frevious inspection. Rodent bait station observed in dry good storage area (photographed). Staff must be a certified pest cotrol operator to apply poisons and baits in the food service area or have a certified company do it. Mouse traps do not require certified pest control using non poison bait. None observed were set off. Plastic tubs are routinely used in dry goods storage and staff have noticed a dramatic reduction to no mice observed this school year by storing product so it is not accessible to rodents. Boil water order check list given at time of inspection so staff can continue operations during a boil water order, if one is issued by the Village of sharon or the Health Department. Drain from 3 bay sink goes to grease trap on other side of wall in electric panel room then returns to kitchen to indirect drain below 2 bay sink. This is inspection 1 of minimum 2 for 2015 to 2016 school year.
