Comments: 5B Three cooked roasts approximately 7 pounds each and 4 inches thick reading 90 degrees and stored in walk in cooler in one bus pan directly next to each other. Chef stated roasts were cooked approximately 2 hours ago then place in cooler as described. Due to arrangement of cooling raosts product would not reach 70 degrees in 2 hours and 45 degrees in additional 4 hours Improper cooling. (coorected by cutting roast in half and separating in 3 separate bus pans. and placed in cooler) 4A Two plastic spray bottles of cleaning solution sotred in kitchen area, (one near water bottle and second near dishwashing area) and impropely labeled as to contents. Corrected by labeling with contents.
