Cook stated she finished cooking ground beef and was draining it at 8:00am this morning She put beef into 2 pans and added taco seasoning and did not put into walk in cooler until 9:15am. This inspector found 50lbs of beef in 2 metal containers one temped at 87dF and the other at 88dF. They were partially covered with foil about 4-5 inches deep. No temps had been taken since initial cook. must monitor temps during cooling phase and i recommend more shallow pans. Reviewed proper cooling procedures and beef was voluntarily discarded by staff.
