Comments: 6a- at 11:53 am this inspector temped test meal and found mixed vegetables at 130dF. Were cooked to 188dF at 10:55am - out of temp for 1 hour allowed to serve met time frame and corrected. Called office and let them know about mixed vegetable temp.

Comments: 6A & B: Potentially hazardous foods (sliced ham, mixed veggies and sweet potato) temped at 100of, 116oF and 113oF respectively) in courier's case (sample meal) at last drop off. Food had been temped before packing and were found to be 209oF, 201oF and 182oF respectively when coming off of stove and out of oven. Food was delivered within 40 minutes. Food was tested both times with inspector's calibrated theropen. Since it was out of temp for less than 1/2 hour, it was allowed to be delivered for immediate consumption. Determination had to be made whether carring cases are insufficient for hotholding or if procedure for packing has to be changed.

The sample meal consisted of Hot dog-dropped to 105oF; scalloped potatoes dropped to 113oF and green beans dropped to 98oF. They all had been cooked to better than required temps before leaving kitchen. Since the foods were out of temp for less than 1 hour, final meal was allowed to be served.
