Comments: White Eagle Conference Center, inspection of the Grove kitchen conducted Thursday at the end of lunch service. An hour-long lunch buffet was available today for a 2-day long meeting of incoming SU Graduate Students. Hot holding and cold holding temps adequate; 142-155F, and below 45F. Discussed the typical buffet format with kitchen staff and servers, usually an hour-long duration, and anything at the end of the buffet is disposed of. Walk-in cooler items at adequate temps and properly arranged; rattatouille 43F. Dishwasher rinse temp observed; 175F. Hair restraints and hand barriers used. Thermometers installed throughout all coolers. Meat slicer was found clean and sanitary. Hood and cookline equipment adequately maintained clean.

Product stem thermometers available. Hair restraints and hand barriers utilized. Kitchen staff complimented for overall cooler cleanliness and maintenance.
