Comments: Observed soup (still hot, approx. 165F), in bucket and ice bath during inspection. Cook says she will stir soup periodically and add ice as needed. Advised cook to monitor soup temperatures throughout the cooling process, modify cooling procedures to achieve proper cooling if needed. Recommend acquiring several ice wands. Tina agreed to 2 week schedule for cleaning maintenance, including floors, equipment, hood filters, and to 30 day schedule for rear door/gaps to be corrected. Re-inspection required. 1.5

Per discussion with owner Tina, cleaning maintenance will be performed within 2 weeks or less, door maintenance shall be addressed, repairs to be placed on schedule during re-inspection if it is not corrected by then. 2
