Comments: Comment: No violations observed. Facility staff were in the process of preparing a Prime Rib Dinner for 200 people. Included with the meat, are potatoes (mashed or baked) and green beans (canned). The cooked food is placed on the banquet table and serving time goes for 30 minutes. There is no cooling or reheatng involved with the food service operation. Baked deserts were also also observed being prepared. Items checked during inspection included: accuracy of metal stem food probe thermometer, availability of handwashing in food prep area, use of barrier (gloves) when handling "ready to eat" food, available sanitizer for wiping cloths and proper concentration, proper sanitizing by dishwasher, proper food storage and general sanitation. It was a busy kitchen but, Well run operation. | ||

The vegetables (corn and beans), bread, baked potatoes, and bread are self served and covered with lids. The buffet line servers approximately 400 patron in 45 - 60 minutes. | ||
