As discussed at the time of inspection, we recommend you look into buying a commercial hot hold unit for burgers because of repeat hot hold violations. The burgers have to kept at 140 degs or greater while in hot holding at all times or they must be labeled with a time and discarded after 2 hours. Kitchen cleanliness is much improved.
