Provide food fact sheet and calibration of stem thermometer could not be completed as ferrule nut located on back side of this thermometer would not turn when placed in the holder also attempted with a pair of pliers and another stem thermometer face dial found turning freely. Therefore, no accurate thermometer found on premises. On 7-7-09 mailed to operator the diagram for proper air gap required at mop sink.
