Operator has installed shelving inside walk-in cooler, food storage pails were not found stored on floor and were on shelving in walk-in cooler. Also, have replaced old can opener with new can opener- blade was clean. Corrected. Will conduct a HACCP training exercise later in year.

Comments: Conducted re-inspection due to violations noted on inspection report of February 9, 2017. Operator has cleaned floors below cook line equipment and near smoker unit. Monitoring thermometer is available inside refrigerated storage unit near cook line- interior temperature was acceptable, less than 45 degrees F. Can opener blade to be cleaned by Operator.

Comments: Discussed proper cooling procedures with Operator during inspection. Rest room sink available with both hot and cold water. Also discussed proper hot holding of cooked potentially hazardous (TCS) foods. A Time Table of Compliance Date of February 23, 2017 has been established to correct violations listed above. A re-inspection will be conducted after this date to determine compliance.

Comments: Reinspection conducted to verity availability of hot water at employee toilet room sink, as per timetable for correction issued during inspection conducted 9/2/16. Hot water was functioning at time of reinspection. Also checked temperatures of food items in make unit, which was not adequately cold-holding food items during 9/2 inspection. Temperatures of potentially hazardous foods approximately 40F on top, 44 on bottom section of unit. Operator indicated fan was dirty and unit operating fine upon cleaning. Discussed working with small quantities that can be served within 15-20 minutes time, such as enough fried rice or General Tao's chicken to fulfill a few orders during lunch period being kept on the counter, promptly returning leftovers to hot or cold-holding.
