Comments: Reinspection conducted to verity availability of hot water at employee toilet room sink, as per timetable for correction issued during inspection conducted 9/2/16. Hot water was functioning at time of reinspection. Also checked temperatures of food items in make unit, which was not adequately cold-holding food items during 9/2 inspection. Temperatures of potentially hazardous foods approximately 40F on top, 44 on bottom section of unit. Operator indicated fan was dirty and unit operating fine upon cleaning. Discussed working with small quantities that can be served within 15-20 minutes time, such as enough fried rice or General Tao's chicken to fulfill a few orders during lunch period being kept on the counter, promptly returning leftovers to hot or cold-holding. | ||
