Comments: All violations must be corrected and are subject to enforcement action. Notes: 1. A container of chicken, approximately 6 inches in depth, was temped in a range from 76-96 F (at 3:40 PM) and was located in the walk-in refrigerator. Per interview with operator, chicken was cooked at 2:45 PM. Education provided on adequate cooling procedures. Example: Chicken must be placed in a shallow pan, no greater than four inches in depth. Once the chicken reaches 120°F, it must be placed in active cooling so that the food temperature can be reduced from 120°F to 70°F or less within two hours and 70°F to 45°F within four hours. Recommend leaving these food items uncovered during the cooling process. Once food item reaches 45°F, it can then be placed in a container at greater depth and covered. 2. All other cooling food items were observed to be no greater than four inches in depth and were temped in adequate ranges. 3. Fish for sushi, located in the front cooler, temped at 47°F. Operator turned the refrigerator down to 36°F at the time of inspection. All potentially hazardous food items in this refrigerator must be held at 45°F or less.
