Comments: Inspection was done during Sunday brunch service. At the desert table, several types of cheese cake were noted at 50 DegF for 45 minutes. Deserts are not stored on an ice table. Operator informed inspector that the desert table is regularly depleted every 30 minutes and employees have a rotation system in place to assure no deserts are served that have been beyond the food safety time limit. This buffet is run for 2 Hrs every Sunday. Time spent reflects travel time
