Item 11B: Wiping cloths dirty, not stored properly in sanitizing solutions Item 15A: Floors, walls, ceilings, not smooth, properly constructed, in disrepair, dirty surfaces Comments: All cold foods temped below 45 degs F. No hot foods to temp at time of inspection. Gloves and hair restraints used. Probe thermometers used. Owner began selling homemade chili and portions it out individually and freezes them. Inspector discussed the cooling process and proper techniques to ensure proper cool down of the chili. Restaurant wants to bump up to High Risk. The high risk menu will be limited to chili and pasta salads due to the fact that they do not have a walk in cooler. Owner stated that after the chili is cooked it will be put into 2 inch pans (uncovered) and placed in a dedicated freezer to cool down. Once cooled down to 70, the chili will be removed to portion into single serving bags and put back into the freezer. Pasta for pasta salads will be cooled down under running cold water until cold and then mixed with mayonnaise and other ingredients. Once mixed together the salads are individually portioned into plastic containers and placed back into the refrigerator. |
