Open-top prep cooler sliced tomatoes 37F, Swiss cheese 43F. Walk-in cooler cooked spaghetti 38F. Product thermometers provided. Observed proper glove use and hair restraints. Discussed cooling procedures and food storage: good. Shellfish tags observed, most recent tag dated September 1, 2018. Facility observed to be kept very neat and well-maintained.

Manager, Lori, stated that a new dishwashing machine is on order to replace current dishwasher. No potentially hazardous foods observed to be stored at ambient air temperature. No raw meats/eggs observed to be stored over/in contact with ready-to-eat foods.

Chef stated that all precooked and cooled foods are reheated to a minimum of 165F (usually 180F) prior to being placed on steam table; all cold salad (egg, potato, macaroni, etc.) ingredients are pre-chilled prior to being mixed; roasts greater than six pounds are divided for cooling, soups/stews/etc are divided into containers at less than 4 inches for proper cooling, etc. // Discussed homemade sauces (stored on counter next to grill) - Chef demonstrated that all sauces are mixed on-site using all commercially produced shelf stable sauces (hot sauce, BBQ sauce, honey, butter, soy sauce, sugar). // Ansul/fire suppression system tagged January 2017. // All steam table and cold-holding temperatures properly maintained. Steam table: all products measured to be 156F or greater. Open-top food prep cooler: smaller compartment - shredded mozzarella 44-47F (Chef stated that door for this section of cooler was recently opening for restocking), larger compartment - sauerkraut 38F. Lower compartment 40F. Waitress cooler - sour cream 42F.
