Comments: Rear kitchen has been modified and is being used for food prep/storage, facility to submit proper documentation. Cook-cool-reheat pamphlet provided. Recommend discontinuing the use of buckets for cooling and storage of potentially hazardous foods. Per discussion with owner, roasts and meatloaf are quartered before being placed in refrigerator in order to facilitate rapid cooling. Glass-front cooler has been replaced with refrigerator, glass-front cooler is used for bread only.
