Educated Earl that it is best to reheat all food items on the stove to 165°F rapidly, then place in steam table. Do not reheat foods in the steam table, steam table is only meant for hot holding food items. 2. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
