Comments: ATOI = at time of inspection. No contaminated foods observed atoi. Large blender, in coffee service area, is now properly supported on a level wooden stand (improper surface cited) and plumbed so that waste water drains into waste water drain of adjacent sink. Soup reheating on stove and then transferred to hot-holding kettles (temperatures measured to be over 180 degrees Fahrenheit (dF) prior to transfer) - ok. Observed pH logs for sushi rice (measurements range from 3.9 to 4.2) - ok. Cold-holding - tuna salad: 40 dF, salmon 44 dF, chopped cucumbers: 41 dF, caesar dressing: 41 dF. Note: observed that customers must walk through part of food prep area (by coffee station and behind salad bar) in order to access restroom. Cardboard no longer used on floor nor along equipment, bucket properly stored beneath walk-in cooler condenser tube to collect dripping water. Sanitizing solution stations properly prepared at each station throughout facility and discussed that clean wash cloth or paper towel is used with each use. Discussed measuring chlorine concentration so that residual for sanitizing solution is maintained between 50 and 200 ppm.
