Comments: Inspection at beginning of daily production allowed the ability to see how the facility was at closing and the start of daily procedures. Closing was with clean surfaces. Opening was with functioning hand wash station, establishment of sanitizer, and functioning thermometers. On 3/16/15, 7 violations were written for the opening setting. There is noticable improvement since last inspection with all of the violations corrected. Cooling volumes represented proper cooling within 6 hours. Reviewed proper calibration and use of thermometer. Inspector demonstrated the need to clean equipment handles on the hidden, inside surfaces. | ||
