Comments: Discussed the following with chef: 1- Using test strips to verify sanitizer concentration, 2- Foods in flip-top coolers are holding at 45°F, cooler temperature should be lowered to ensure temperature of foods do not exceed 45°F when continuously opening and closing doors, 3- Discussed wood working and saw dust producing activities in basement that are occurring in close proximity to ice machine, 4- Discussed complaint (condition were observed to be acceptable ATOI) regarding accumulation of trash in alley due to the number and size of trash receptacles. Facility may be required to increase the frequency of trash removal to prevent the area from become unsanitary or a nuisance, 5- Discussed ensuring that thermometers are readily available for use and calibrated.

The back alley appeared clean and all garbage bins were clean and orderly.
