Comments: Inspection was conducted in late morning during finals week, so there was limited food out on the service lines. However, most of the food that was out for service was found at acceptable holding temperatures. Operators indicated that they have made some changes to the holding processes on the serving line since the last inspection. Cold items are now being prepped ahead of time and held in the walk-in coolers until they are needed at the service line. Additionally, commercially prepared pre-made items are also being held in the walk-in coolers so that they are pre-chilled before service. Hot holding temperatures are now being monitored every hour instead of every two hours. Discussed new Food Protection Manager Training requirements with operators at the conclusion of the inspection. Per Aramark corporate policies, all management and supervisory staff must have the ServSafe Manager Certification, so several certificates were available upon request. |
