Comments: At the time of inspection, the 1/3/19 inspection report was reviewed with the head cook. All violation from the previous report had been satisfactory corrected. Hot Holding temperatures were 156F and above, Cold holding temperatures 43F and below. Employees were observed using good glove use. The automatic dishwasher low temp was 120F, Discussed having dish machined serviced.

Top shelf of walk in has many large items that block airflow and walk in fans are directed at back wall of refrigerator and appear to be improperly installed. air circulation is not adequate especially when rapid cooling or when deliveries received. Facility recommended to install plastic curtains and/or repair fans to improve circulation. gasket is not tight sealing.
