Hot held food items were greater than 140 F and cold held food items were less than 45 F Provided Jeff with a copy of the Food Safely & Employee Training Packet. Discussed proper cooling and reheating procedures, temperature guidelines for food safety and adequate sanitizer concentration with Jeff.
