For a number of years, the facility has been hosting a christmas dinner which serves 800 persons and which is usually scheduled the first Sunday in December. The menu includes roast turkey, stuffing, squash, mashed potatoes, corn, cranberry sauce, coleslaw, pumpkin pie and apple crisp. The food prepared prior to the event is roast turkey breast, stuffing, coleslaw, and the pies. The turkey and the stuffing is cooked and cooled on Friday. The pies and apple crisp are cooked and cooled on Saturday. The remaining food is cooked the day of service. The facility has a large walk in cooler, several large refrigeration units, a commercial range, and several large ovens. The facility appears able to produce this event with the equipment thst is present. |

The proper cooling proceedure of cutting the breast into small chunks, then placing on single layer on a sheet pan and cooling under refrigeration was noted. Cooling logs maintained by the cook indicate the turkey is meetimg the cooling curve, and observation of food temperature made by the inspector verified the correct cooling process. However, caution should be used when cooling large volumes of food in the reach in cooler units. Within 5 minutes of the food cooling food being placed in the units, the ambient air temperature raised 12 degrees to 46F, then recovered to 40F within 20minutes. |
