Discussed future change in cold holding requirements to 41° F and recommended that foods should be held in the mid to upper 30° F range. Food temperatures measured in other refrigeration units were acceptable. Examples include: prime rib = 38° F, cooked chicken wings = 39° F, cooked onions = 39° F. Discussed cooling procedures and keeping cooling logs. Do not cover foods during the cooling process. Discussed storage issues for cooked bacon. Only fully cooked bacon with no white fat can be stored at room temperature unless a waiver for using Time as a Public Health Control has been issued. If bacon is partially cooked, it must be properly cooled and either stored cold (at or below 45° F, or hot at or above 140° F). Per discussion with the manager, the facility will be throughly cleaned when they close for the season at the end of the month. |
