Comments: Per interview with the head cook he and staff are present for food prep at 2pm. The heat lamp did not appear to be adequate to hot hold food above 140 °F. Sour cream coleslaw and cottage cheese were stored on ice and not in ice They were recently removed from the refrigerator and stored as observed. Adding ice was performed. Applying for using Time as a Public Health Control was discussed for hot and cold potentially hazardous food on the serving line.

Sliced raw potatoe French fries, cottage cheese and cole slaw are required to be cold held at 45 degrees F or below. The level of ice for items being held in an ice bath must be to the top of the product depth and surrounded on all sides with ice. Hand wash soap and paper towels were available at the hand wash sink and three bay sink procedure was reviewed.
