Comments: Hot held sauce temped at 140 degrees. Cold held tomatoes temped at 43 degrees, gravy 43 degrees, lemon temped at 44 degrees. Air temperature in walk in freezer is at 26 degrees and some items appear to be unthawing. 6 large sheet trays of cooked sausages were placed into freezer to cool shortly before inspector arrived. This large amount of hot food product along with busy lunch period and morning delivery appear to be the cause. Discussed need to monitor unit with owner and to be cautious when placing that large amount of hot food into freezer at once. Please also mail copy of report to: 499 Wells Bridge, Otego NY 13825.
