Comments: Complaint discussed with bartender, maintenance. Fruit fly sticky traps in garbage noted with numerous fruit flies attached, none noted flying around during inspection. Per maintenance individual the main drain was backing up into establishment, the trap had been corroded and no longer functioning. This was replaced and entire facility was thoroughly cleaned and sanitized. Occurred approximately one week ago. No fruit flies noted in any liquor bottles, per bartender they did find a couple but those were immediately discarded. Smoking at time of inspection, bartender stated she is not paid nor receives any other compensation. Per facility rules, smoking is prohibited during meals, allowed again once meal is complete. (i.e. 5:30-8 meal, no smoking, smoking allowed once everyone is finished eating, may not be until 8:30). No smoking is allowed in the kitchen at any time. Discussed proper thawing of chicken wings, no thawing at room temperature or in sinks unless under running cold water.
