Comments: Discussed staff wearing a hat cap or hair net in food prep kitchen. Also discussed calibration of thermometers on a regular basis. Originally food service manager could not find thermometer. Then found an older version that was not calibrated correctly. . Did have back ups Available at second kitchen on premises and retrieved to have on hand at first main kitchen. All food temperatures good. Dishwasher temps 165 degreesF wash and 185 degreesF rinse. Also discussed not to cover apples with a cloth.

In discussion with Annette Chamberlain, all the equipment present was existing and that no new or used equipment has been added. The kitchen was last used approximately 4 to 5 years ago. Reminded Annette that our office must be notified prior to making an kitchen modifications or changes of use. All remaining violations must be corrected no later than 10/15/15.
