Comments: Walk-in cooler is currently being repaired. Once repairs are made and temperatures can be maintained at 45 F or below, cooler may be used to store TCS food again. Receipts or proof of repair can be sent to [email protected]. Leak over stove has been repaired by someone in-house. Tar was melted and white silicone placed over leak. There is no water dripping in kitchen currently but temperatures are below 0 F. Operator must ensure that leak has been repaired prior to returned contaminated area to service. Operator must also wash, rinse, and sanitize area prior to returning to service. Repairs to freezer condenser unit are still being scheduled.

Comments: AT-10 hand delivered to Virginia Kinne. AT-10 was signed and check #1191 was received for $1600. All food storage has been relocated from the basement to the far end of the cafeteria. Area has easily cleanable walls and floors with no apparent water leaks. Food storage is adequate. The cooler is in the process of being repaired. The operator stated that a freezer truck will be brought in, the freezer downstairs will be defrosted, and the condenser unit also repaired. Operator was reminded not to use area around grill and grill top while leak is still present.

There were only approximately 5 gallons of bottled water available at the time of inspection. **Recommend updating water contingency plan and submitting a copy to the NYS DOH Geneva District Office: [email protected] Facility is to remain closed until permission to reopen is given by this Department. When an adequate supply of bottled water is provided to the kitchen, call Rick Gardner at (315) 807-8638 to obtain permission. The violations observed during the course of this inspection may result in an Enforcement Action by this Department.
