Correct noted violations by next routine inspection later in 2016. french onion soup at 170. it is only kept for 2 days because of quality choice by chef so it is discarded after second day. Discussed with Chef Pano when any food or sauce is reheated, heat uup to at least 165 or 74 degrees celcius (he is familiar with metric temperature measurement the best). Discussed the hot hold temperature of 60 degrees Celcius which is 140 degrees. Ground meat minimum cook temperature cook to 70 degrees celcius or 158. chicken or other poultry turkey, bird, minimum cook temperature is 74 degreess celcius or 165. eggs are cooked to 63 degrees celcius or 145. rare roast beef is 55 degrees celcius or 130. everything else is cooked to 60 degrees Celcius or 140. Discussed no bare hand contact with any food that is ready to eat. Discussed using utensils at preparation counter so the salad ingedients are not touched with bare hand. tongs, serving spoons and other utensils can be used to get ingredients without touching.

Start a file to keep the tags. The tags can be kept for as long as you want after the 90 days is over. Note its 90 days to keep the tag after the shelfish are used.
