Item 8E: Accurate thermometers not available or used to evaluate refrigerated or heated storage temperatures Comments: This is inspection number two of two for 2018, and inspection number one of two for school calendar year 2018 to 2019 as required. fruit out for service are provided tongs that are put through the mechanical dishwasher between each lunch period, this is a nice procedure. Temperatures of foods at service line: rice at 202 degrees F, hot dogs at 158 degrees, beans in sauce at 174 degrees all hot holding correctly. Hot dogs arrive frozen and are placed in walkin freezer. They are thawed in the walk in cooler starting two to three days in advance and are boiled for cooking. Left pamphlet on heating and cooling foods for staff to review and compare to their procedures to improve if needed. |

Nicely done. temperature of pork ribs out of oven and prior to placement in servicemline was 190 degrees. Items at service line broccoli is 150 top center 180 outside okay rotini is 150 degrees, pork rib sand wich is 150 being served now. okay. |

Temperatures at service line the menu is breakfast for lunch and the cooked pasteurized eggs are at 167 degrees and the minimum for cook temperature and hot holding for pasteurized eggs is 140. The precooked sausage is at 152 degrees at the service line and the minimum cook tempeerature for a commercially precooked product is 140; same for hot holding. Discussed the prechilling of ingredients for cold salads. Note stove exhaust hood is spotless corrected from a previous inspection. |

Discussed Lead samples with Superintendent R. Reeve and John Warner. Discussed operator certification with John an Nick Merwin. They have completed course. Discussed preparation and storage of tuna salad. Treat as uncooked food like lettuce that will not be cooked. Prechill all ingredients priot to preparation. discussed storage od raw foods. Reviewed mechanical dishwasher final rinse went to 195 degrees. |

Item 12C: Plumbing and sinks not properly sized, installed, maintained; equipment and floors not properly drained Comments: This is inspection one of two for calendar year 2016 and inspection two of two for the school year 2015 to 2016 as required. Gave wash rinse sanitize method for three bay sink area. Discussed cleaning of the grease trap, done by maintenance staff 2 to 3 times every year. Gave boil waternotice check list for food service establishments for staff to review. Todays menu item was dunkers which are bread sticks covered in delicious cheese to be eaten plain or with tomato sauce. There is a log book where temperature and time of food product cooking is recorded. My temperatures were close. dunkers cooking ranged from 157 on inside of tray, to 141 at hotholding steam table service line. tomato sauce was at 180 at service line. Discussed cooling of unused product. Cooked dunkers are allowed to cool enough to not melt the plastic covering prior to freezing or refrigeration. They are on baking sheets. The sauce is cooled with cooling wands which are frozen and placed in the sauce to cool to from 120 To 70 degrees in 2 hours then to 45 or less in an additional 4 hours maximum. Note wash rinse and sanitize the cooling wands after each use and store in a clean area of the freezer. There is certified pest control operator that routinely comes for rodents, ants, bees but not for cockroaches. fruit for service is under clear display and tongs are provided for diners to get the piece of fruit, so the fruit is protected during display. Danielle Proudman was present during the inspection and discussion and will be the Food Service Manager in September 2016 |
