Comments: At 12:35, approximately 5 lbs. of raw hamburger patties were observed in the walk-in at 50ºF. Upon interviewing the operator, it was learned they had been prepared around 11:00. The operator stated an additional 5 lbs. portion from the same 10 lbs. tube had been placed in the freezer at approximately the same time. This portion was at 38ºF. The operator placed the raw beef from the walk-in into the freezer for rapid chill. The raw beef placed in the freezer at 12:35 was at 42ºF at 13:00.

Comments: Facility had truck deliver all of the food while inspector was there, so food was all of temperature coming right out of truck. Person in charge had all the food on ice in the walk- in cooler and refrigerator. However, the walk-in cooler thermometer still read 51'F and the inspector's thermomter read 55'F for an ambient temperature. Inspector will re-turn for re-inspection to make sure walk-in cooler can hold food at 45'F or below. Discussed proper cooling with person in charge.
