A painted plywood floor has been installed behind the bar; discussed with owner the additional plans to finish the job. A vinyl floor has been installed in the walk-in cooler. The meat slicer has been removed from the operation; operator is now using pre-cooked pre-sliced products. A second handwashing station will be set-up at the 3-bay sink. Discussed using a planer to resurface the cutting boards throughout the restaurant.

Discussed cleaning routine for kitchen equipment. The meat slicer is sanitized prior to being used. Discussed the possible urinal leak in the men's restroom. A plumber is inbound to investigate a possible blockage at the prep sink, the indirect drain is working properly. Thermometers are installed throughout restaurant. The corner upright beer cooler has been cleaned since previous inspection.

Sanitizer available at the dishwasher, and bleach is available throughout restaurant. Discussed floor and grease trap cleaning schedule. No hot holding, no cold holding at time of inspection. Discussed reheating and hot holding temperatures and processes. Hair restraints and hand barriers utilized. Stem thermometer available and calibrated. Chlorine residual observed at Prep sink, approx 0.5ppm. An additional inspection will be conducted prior to the end of 2016.
