Comments: Linklaen House, re-inspection conducted Wednesday prior to lunch rush. All hot holding and cold holding temperatures observed at proper adequate temps. Thermometers installed throughout. The walk-in cooler interior has been recently cleaned; discussed removal and replacement of damaged or deteriorating shelves. The shelves inside the walk-in cooler have been recently cleaned but remnant dust and residue was observed in the difficult to access areas. The ice machine interior has been cleaned. The table mounted can opener was observed to be clean and free of residue. Discussed the responsibility for cleaning the beer taps.

Comments: The Lincklaen House, restaurant inspection conducted Tuesday during lunch. Discussed reviewed daily prep and reheat procedures and routine. Four new deli prep units were installed in the kitchen to replace older ones. Additonal equipment upgrades are planned for the new year. Discussed with manager, the requirement to submit A Notice of Intent to MCDOH when any equipment is purchased, replaced, installed, or if any renovations, or menu changes are planned. Thermometers are installed throughout. Discussed maintenance of smooth cleanable surfaces (walls and ceilings) throughout storage areas.

Cold holding temperatue of melon, chopped tomatoes, salsa, cold rice and sausage observed at temperatures ranging from 39-43 degrees Fahrenheit. Mechanical dishwasher operated in accordance with manufacturer instructions; wash temperature observed at 156 degrees Fahrenheit with a final rinse temperature of 184 degrees Fahrenheit. Discussed food storage to include storage of food and beverage off of the floor and means to prevent double-stacking of food product. Discussed the need for on-going maintenance of facility including but not limited to repair of ceiling where recent work was completed in basement storage area and repainting kitchen baseboard and door casings. Light shield in walk-in refrigeration unit has been repaired.
