The restaurant re-opened for the season last Wednesday. During the off-season: 1) a new handwashing station has been installed at the previous location in the kitchen, the wall has been replaced, a new sink and plumbing installed, 2) a new handwashing station was installed in the prep kitchen, 3) new vinyl flooring was laid in the employee restroom, 4) areas of the kitchen floor were regrouted, 5) areas of the basement have had additional wall panels installed. All equipment is maintained cleaned and sanitary. Thermometers are installed in all coolers. Discussed with owner, sous vide cooking and ROP; additional guidance to be provided to operator (not a part of current operation), and process and procedures for whole sale production "Horned Dorset Cheese Dip", product is currently being evaluated by food scientist consultant.
