Comments: Comment: Inspection occured when the facility was just openning up for service. Items checked during inspection included: accuracy of food probe thermometer, proper concentration of sanitizer for wiping cloths, availability of handwashing in food prep area, proper cold holding below 45F, no hot holding, sanitary food storage and general sanitation. Facility appeared clean and well organized.

Comments: Comment: There was no food preparation activity occuing during time of inspection. Items checked during time of inspection included accuracy of food probe thermometers, proper cold holding of refrigeration units, proper concentration of sanitizer, availabilty of handwashing in food prep area, availability of barrier (gloves) for handling ready to eat food, proper food storage and general sanitiation. No evidence of rodent activity was observed. Chlorine residual was checked at three bay sink and found to be 0.4mg/L.

Although there are porous surfaces in food prep area, all food prep surfaces appeared clean and general sanitation was satisfactory. Accuracy of food probe thermometers was verified, as well as, proper cold holding and sanitizer concentration. Chlorine residual was checked at hand wash station and measured 0.6mg/L. A water sample was also collected. Because no food preparation was observed and facility had recent enforcement, another inspection may occur in 2016.
