Comments: Michigan sauce was observed cooling in a large pot set in an ice bath in one of the sink bays. Inspector took 2 temperature readings 15 minutes apart and the temperature fell 9 degrees (95 to 86) in 15 minutes. Excellent cooling method for this sauce!
