Comments: Observed burgers coming off the grill at 185F and being placed into a pre-heated hot holding cabinet. Observed an accurate probe thermometer. Demonstrated use of chlorine sanitizer test strips with staff to verify concentrations in 3 bay sink. Recommend working in small quantities of time and temperature control for safety (TCS/PHF) food and only pulling out of refrigeration what is needed at a time. Recommended using metal containers on salad bar and keeping ice to level of food. Temperature of tcs food on salad bar was 42F(diced ham) and 40F (cottage cheese). Discussed cooling requirement to ensure all phf are cooled from 120F to 70F within 2 hours and from 70F to 45F within 4 additional hours. Methods such as ice water bath, adding ice, depths of less than 4 inches in uncovered pans placed in walk-in refrigerator or other commercial refrigerator, or use of cooling wand/paddle are to be used. |
